I’ve done it, I’ve shed the double down and my ghostly skin is ready to soak in that Vitamin D.
Dare I say spring is here? Before we get another blast of snow, I’m ready to accelerate the outdoor action and pump off the stress.
And when I’m good and tired, I am returning to my European roots and slowing down a little for the off-season. Envision a banquet table set in a palette of sage green, orange and gold, a bouquet of Gerber daisies, bottles of wine, twinkle lights and dinner plates filled with roasted vegetables from the local farm. This is what I’m craving, time spent outdoors with friends and good conversation as the snow on the mountain peaks shimmer in the evening light and the fields change to a deep emerald green.
Instead of squeezing every spare drop of free time I have onto paper, I also plan on focusing on my children, my garden and adventurous travel excursions.
With this new mindset, I sauntered into the market in search of Arugula for the stuffed chicken I was preparing for our first spring dinner with friends. There I ran into Angel from El Salvador. Angel works in the Produce department and always helps me to find the freshest vegetables. As we searched for my ingredients, he turned me on to his bean and egg sandwich recipe, “Even the people at the Immigration Bureau know me for that sandwich,” he said.
Last night, Wade and I sat outside and chatted until the last sun’s rays sunk behind the mountain. The boys were inside nursing their wounds from this past weekends Lacrosse Tournament.
We sauntered inside and I made Angel’s famous sandwiches and they were a hit. Here is the simple recipe:
Blanch or lightly sauté green beans with salt, garlic salt and garlic
Cut them up into bite sized pieces
Scramble 3 eggs
Add shredded Gruyere
Spread mayonnaise on your favorite sandwich bread and put it all together. Delicioso!

Really longing for the warmth of spring and summer to set in – although as I write, the storm clouds, with attendant snow, are gathering. However, I do look forward to trying the bean and egg sandwich. Sounds kind of tasty!
