Well Craig Pearce and Samantha Cordts-Pearce have done it again, they have opened another successful restaurant in Aspen. CP Burger is a bit of a departure from their other fine dining restaurants like Lu Lu Wilson, The Wild Fig and Brexi Brasserie, and it does not disappoint. How they manage all of their restaurants so smoothly is anyone’s guess but one thing is for certain, they continue to deliver quality with a smile.
I just wish that I had an ounce of their foresight and know how. How many times have I passed by the Silver Circle Ice Rink, located across from the Rubey Park bus station, without ever once approaching the idea of turning the winter skate rental building into a burger joint? The answer to that would be never.
The boys and I walked up to the rink that turns into a breeding ground for wheels and kids in the summertime and I thought, perfect, the kids can run around while I enjoy myself. It was a happenin’ scene, with a capital H. It seems as though Craig and Sam’s hard work has earned them quite the reputation and what is clear is that they have a whole lot of friends who will follow them, and their food, everywhere.
At 12:30pm the two lines were filtering out the door and the line seemed to flow for the entire time we were there. Vince and Janet handled the crowds magnificently as they hospitably took the orders and Craig and Sam delivered the goods to the tables with the food wrapped diner style with burgers in parchment paper and perfectly sliced fries poking out of rectangular cartons.
As I walked around taking photographs, I was amazed to find that many of us there on that fine Saturday, were connected in one way or another. One friend lived in my hometown for a year after getting kicked out of private school and graduated high school with my sister, another was best friends with one of my x boyfriends. I felt like we were one giant Aspen Grove connected at the roots.

I gathered notes and soaked it all in, all the while dealing with children who woke up on the wrong side of the bed. I was impressed with the diverse menu where you can start the day by having a smothered burrito for breakfast. For lunch there are a plethora of burger choices like the rapidly rising to stardom $5.75 CP burger, the Chicano “Fire” Burger with green chili and guacamole, the Summit Burger with Applewood Smoked Bacon and one that I’ll have to come back to try, the Tuna Burger with Tuna, Kale, Miso-Vinaigrette, Tomato, Onion and Wasabi Aioli. Other choices include an all beef Kobe or Kosher hot dog and a $6 kids meal. For me, I was intrigued by the salad choices and I had a tough time choosing between the Chicana salad or Lulu’s original Kale salad. What a phenomena, finally something for the mama. They even have Edamame on the menu, one of the only green vegetables that the kids will actually eat.
I scanned the menu while Tucker lay on the floor rolling around with some complaint that I had no desire to deal with and my eye landed on the “Spiked” shakes, elated that they also had a liquor license. I almost sidled up to Vince and asked him to hand me a spiked shake, sans shake, but decided against it. I am a professional after all. I made another note to self, bring more little friends next time.
For dessert the boys couldn’t decide whether to get a frozen yogurt with crunched up heath bars or a monkey stick, a frozen banana covered in chocolate. In the end they opted for the Oreo Shake which my little Dennis the Menace promptly dropped onto the ground. As he watched the cloud of whipped cream melt into the concrete I announced that this writing gig done gone into overtime and that it was time to leave but I’ll be back, of this I am certain.
