America’s cult outdoor culinary festival, Heritage Fire by Cochon555, returns to Base Village in Snowmass on June 16, 2018 with an all-star cast of chefs who will take guests on a journey of whole animal cookery over live-fires. The list of heritage and heirloom foods includes dry-aged beef, whole pigs, lamb, and goats alongside responsibly-raised fish, squab, rabbit, duck, fish, chicken and locally grown heirloom vegetables. Events like Heritage Fire help foster relationships between local farms and emerging chefs who are committed to serving guests flavorful food from real farmers. Heritage Fire Snowmass will showcase over 50 notable chefs and butchers, each grilling heritage-breed animals en plein air against the Rocky Mountain backdrop, and each inspired by global food cultures. A preview of participating chefs include John Manion of El Che Bar (Chicago), Steve Redzikowski of Acorn (Denver), Shota Nakajima of Adana (Seattle), Manabu ‘Hori’ Horiuchi of Kata Robata (Houston), Jean-Philippe Gaston of Izakaya (Houston), Joshua Pollack of Rosenberg’s (Denver), Bill Miner of il Porcellino (Denver), Jim Butchart and Andrew Helsley of Aspen Skiing Co., Nate Singer of Blackbelly (Denver), Daniel Asher of River & Woods (Denver), and Kelly Whitaker of Basta (Denver) to name a few. In addition to the meat-laden feast, the event also features a Pop-Up Butcher Demo and Silent Auction with celebrated butchers Kate Kavanaugh and Josh Curtiss of Western Daughters (Denver). Every event is a fundraiser for Cochon555’s sister charity, Piggy Bank — a start-up farm in Missouri that serves as a kickstarter for new family farms and a safety net for those in the wake of a disaster (flood, fire and disease).

Sip sparklers from Topo Chico and the Manhattan Project featuring premium bourbons from Eagle Rare, Buffalo Trace, Woodford Reserve Double Oaked and Breckenridge PX Cask Finish topped with Luxardo cherries. Learn about pairings at the TarTare Bar aligned to the wines of Antica Napa Valley and a “Taste the City” culinary spotlight featuring the racy portfolio of Wines of Germany. Experience innovative cocktails from Courvoisier and a Perfect Margarita presented by El Tesoro Tequila and taste through the stunning portfolio of Wines from Rioja, Blanchard Family Wines and beautiful Rosés from Chateau D’Esclans. Cochon555 will debut a new experience called Trompo “Hora de Familia” in celebration of its first Global Cochon555 event in Mexico City later this year as well as Royal Oak’s Natural Charcoal “Dirty Steak” Tomahawk Bar. Guests wanting a sweet bite will enjoy a Pop-Up Pie shop by Mike’s Pies and Swine and Sweets, an innovative spin on dessert spotlighting notable pastry chefs working with Perfect Puree of Napa Valley.
Additional programming to Heritage Fire includes, Rustic Grind on Thursday June 14th at 6:30pm as part of the Snowmass Free Concert Series. This Heritage Fire preview event features wood-fired grills loaded up with heritage breed sausages prepared by chefs with national acclaim paired with premium wines and hand-crafted cocktails from El Tesoro Tequila and Courvoisier. Located inside the concert venue, ticketed guests will enjoy unlimited food and drink for $40.
