America’s cult outdoor culinary festival, Heritage Fire by Cochon555, returns to Base Village in Snowmass

America’s cult outdoor culinary festival, Heritage Fire by Cochon555, returns to Base Village in Snowmass on June 16, 2018 with an all-star cast of chefs who will take guests on a journey of whole animal cookery over live-fires. The list of heritage and heirloom foods includes dry-aged beef, whole pigs, lamb, and goats alongside responsibly-raised fish, squab, rabbit, duck, fish, chicken and locally grown heirloom vegetables. Events like Heritage Fire help foster relationships between local farms and emerging chefs who are committed to serving guests flavorful food from real farmers. By shining a gastronomic spotlight on the hard-working people who are raising heritage-breed animals, the wood-fired feast will feature more than 100 prominent chefs, farmers, sommeliers, distillers, brewers and barkeeps working in concert to create luxurious moments that educate the mind. Tickets start at $150 for an all-inclusive afternoon feast. To purchase tickets, visit or for an in-depth look, watch the video.

Heritage Fire Snowmass will showcase over 50 notable chefs and butchers, each grilling heritage-breed animals en plein air against the Rocky Mountain backdrop, and each inspired by global food cultures. A preview of participating chefs include John Manion of El Che Bar (Chicago), Steve Redzikowski of Acorn (Denver), Shota Nakajima of Adana (Seattle), Manabu ‘Hori’ Horiuchi of Kata Robata (Houston), Jean-Philippe Gaston of Izakaya (Houston), Joshua Pollack of Rosenberg’s (Denver), Bill Miner of il Porcellino (Denver), Jim Butchart and Andrew Helsley of Aspen Skiing Co., Nate Singer of Blackbelly (Denver), Daniel Asher of River & Woods (Denver), and Kelly Whitaker of Basta (Denver) to name a few. In addition to the meat-laden feast, the event also features a Pop-Up Butcher Demo and Silent Auction with celebrated butchers Kate Kavanaugh and Josh Curtiss of Western Daughters (Denver). Wine enthusiasts will taste through the stunning portfolios of Wines from Rioja, Chateau D’Esclans, Wines of Germany, Antica Napa Valley, Silver Oak, Kosta Browne, Pax Wine Cellars, Sandhi, and Twomey Cellars in addition to hand-crafted cocktails and spirit tastings from Breckenridge Distillery, Courvoisier and El Tesoro Tequila to name a few.  Every event is a fundraiser for Cochon555’s sister charity, Piggy Bank — a start-up farm in Missouri that serves as a kickstarter for new family farms and a safety net for those in the wake of a disaster (flood, fire and disease).

“The tour is about uplifting small, family farmers through epic culinary moments,” said founder Brady Lowe. “We create and restore connections between the farmer and chef who want to raise, source and serve food raised with purpose and passion. Together, through eating, we become stewards of the good food movement, motivate change and influence our food system from pasture to plate.”

“We are thrilled to welcome Heritage Fire back to Snowmass for the fourth year,” says Rose Abello, Tourism Director, Snowmass Tourism. “Heritage Fire is one of the most beloved and anticipated events of the summer, and is a perfect complement to the FOOD & Wine Classic taking place in Aspen that weekend. We can’t wait to see what new, unique, and tasty dishes the participating chefs will create.”
