‘Let’s go to Town’ has new meaning these days. ‘Town’, the hotly anticipated new restaurant in Carbondale, has generated quite a buzz since opening.

Located at 348 Main Street and under the same ownership as Phat Thai, the former 689 in Carbondale and The Pullman in Glenwood, expectations were running high and despite some initial teething trouble which I’ll go into below, it’s proving to be the place to eat.

Last Friday night was jam-packed and the Aspen faces amongst the patrons indicated that folks will travel to eat well. The interior isn’t much changed since the previous ownership, with the exception of moving the entrance to the side to accommodate an espresso bar and small pastry shop, making it a great new place to drop by throughout the day, 7 days a week.

Back to my Friday dining experience – it was good and bad. I attribute the bad bit to the fact that new restaurants need a while to settle in, especially when packed to the rafters – and if you want to be heard, sit away from the bar.

I scoured the wine list unable to find a NZ Sauv Blanc; when I lamented to the server, one was provided – impressive. The cocktail list looked imaginative and well-priced.

The equally well-priced menu is similar to that of The Pullman, with some decidedly European offerings such as Crispy Pig Ears and Pork Belly.

I love pasta, especially homemade, so I ordered papardelle with Colorado lamb and kale. Sadly, the pasta was undercooked – stiff and floury in fact. My friend agreed, as did the owner who tested it en route back to the kitchen, apologizing profusely.

I requested that the pasta be cooked for 2 more minutes.

Meanwhile, I tucked into a lovely house salad with toasted hazelnuts and my friend really enjoyed their artichoke salad and roasted eggplant with tofu.

My replacement arrived, only to be an exact replica of the first one. Clearly, my message hadn’t reached the kitchen. An embarrassing third order was delivered with inconsistently cooked pasta, a raw kale leaf and hardly any lamb at all; a ‘screw you’ serving. The owner was vigilant, attentive and mortified – they insisted on waiving our entire bill which was extremely kind, as I’d have been fine with just the pasta being deducted.

Happily, what followed was one of the most sublime desserts I’ve ever eaten; a butterscotch salted caramel pudding that still makes me shiver when I think of it.

Two days later, curiosity got the better of me so I returned for Sunday brunch.

Sitting in the patio garden was relaxing and after a massive cappuccino that was more of a latte but was nevertheless excellent, I ordered duck hash with poached eggs. The egg whites were slightly runny; OK for me but I suspect some folks might prefer a firmer egg – and it was studded with golden nuggets of melted cheese…utterly delicious and wonderfully rich.

I’d have loved to linger but the Aspen trees caused my allergies to kick in.

I’ll definitely be heading back to Town!
